November means Christmas is just around the corner, and quite remarkably another year has almost snuck by us again. If to you the year also seems to have gone rapidly, it probably means you’ve been quite busy - hopefully doing something you enjoy. So now is the time to relax a bit more than normal. Live a little larger. After all, it’s the silly season and we should embrace it. And to get you on your way, we’ve highlighted a few of our favourite food and wines that will help you do so in style.

November also marks a triumphant three years for our amiable Chef Charl. His easy-going nature belies his meticulous attention to detail, and his classic culinary talents have no doubt been a big reason many of you return to Caveau so often.  For this we are eternally grateful. Cheers to you, Charl!

  Champagne Billecart – Salmon Brut Réserve NV

No other wine can ever match the elegance and charm of Champagne. The original bubbly conjures up images of a luxurious lifestyle led by the privileged few. And though James Bond drinks Bollinger and Jay Z used to drink Cristal, there are a few champagnes that while not as well known, are enjoyed by true connoisseurs.

Champagne Billecart-Salmon was founded when Nicolas Francois Billecart and Elisabeth Salmon were married in 1818. Almost 200 years later, this family winery continues to produce exceptional quality wines. But perhaps of greater importance, they embody the true lifestyle that is the spirit of champagne. As they describe it, it is a life that can best be described by the words finesse, balance and elegance.

These qualities are perfectly expressed in their Brut Réserve. From their vineyards in Epernay, the wine is a traditional blend of Chardonnay, Pinot Noir and Pinot Meunier. A soft palate and understated richness confirm what you would expect from a respected Champagne house. Though they make several special Cuvee’s, this Brut is perhaps one of the finest Champagnes available in the local market.

Jean’s Thoughts: It is clean, it crispy, a light dosage, one of my favorite bubbly. Can’t say much more you simply need to try it. Ken Forrester thank you to import it for all of us!!!

Brendon’s Thoughts: I love the romance Champagne brings to an occasion. This wine is not only perfectly light yet delicious in flavour, just saying the name makes you sound sophisticated in the company of others.

Caveau Champagne Platter

Deli Choice: White Anchovies

It’s sad how often the most delicious morsels are the most rare. White anchovies are a treasure that must be enjoyed when found, and we’ve been lucky to get our hands on some truly great stock. A perfect appetiser or means to make your salad that much more special, these little treats burst with concentrated flavours and  are worth every cent.

If you’re serving the finest champagne, you’re going to want to serve it with the finest foods to match.This platter will compliment your good taste in bubbly and provide a luxury start to an evening, or even a brunch.

Ingredients

6 x Walvis Bay Oysters
300g Salmon Gravalax
300g Steak Tartare
100g Kaviari Salmon Roe
180g Foie Grois
200g Smoked Butterfish
Melba Toast

Method

  1. Serve the oysters on ice with a spliced lemon.

  2. Serve the Salmon Roe with a small bowl crème freche.
  3. Serve the Steak tartare in a bowl topped with an egg yolk.
  4. Serve the remaining items on their own, with the melba toast on the side.
    ... Enjoy with you’re your champagne!

Friends in Wine: FMC Chenin Blanc 2005
 

We’ve got a great one here… Ken Forrester and Martin Meinert are that rare combination of good friends and great business partners. In between long lunches and loud dinners these two enigmatic characters have turned Ken Forrester Wines into a leading wine brand in South Africa.  Their FMC Chenin Blanc is their finest Chenin Blanc, a varietal they are both extremely passionate about (though their passion seems evident in everything they do). Lush and rich in flavour, the wine spends 9 months in French oak to develop serious complexity and a ridiculously long finish.
